Shirogami #1 / White Paper steel highly regarded for its ability to achieve the ultimate sharpness, is used in this blade. Its exceptionally keen edge makes it ideal for culinary techniques that demand precision and delicate cutting.
Among all White Paper steels, White Paper Steel No. 1 has the highest carbon content. While its low level of impurities makes precise temperature control during heat treatment particularly challenging, this issue has been overcome through the use of a dedicated quenching tank. As a result, the steel's full potential is realized, maximizing the outstanding performance of White Paper Steel No. 1.
NOTE: Shirogami is not rust-resistant. This high-carbon steel is susceptible to corrosion. To prevent rust, thoroughly wash, wipe, and dry the blade immediately after each use. If rust appears on the cutting edge, carefully remove it with a sharpening stone. For rust on the blade's body, use a mild stainless steel cleanser or a fine-grit abrasive pad (suitable for carbon steel), taking care to avoid scratching the surface.
Avoid twisting the edge or striking the blade. Do not cut frozen foods or bones, as the thinner, sharper edge of Japanese knives may chip or break. Since Japanese knives are handcrafted, slight scratches may appear naturally.
